    Poblano Potato Soup

    List of Ingredients

    This soup will, as we say in the South, make yo' slap yo' mamma. It is absolutely delicious.

    6-8 green chiles, roasted, peeled, and chopped
    1-2 jalapenos, chopped very fine
    2 cups chicken broth or 1 can low-salt chicken broth
    1 clove garlic, minced (optional)
    8 large potatoes, cooked and mashed
    1 tablespoons butter
    1 large cream cheese
    1 quart milk (or water and 2 cans skimmed evaporated milk or combination of milk and half and half)
    1/4+ cup lemon juice
    S & P




    Recipe

    Combine all ingredients except milk in large soup pot. Bring to boil; reduce heat and simmer about 30 minutes. Add milk or cream. Heat, but do not allow to boil. Blend, if desired.

    Simplified version:
    Substitute 3 cans chopped chiles for the poblanos and use frozen mashed potatoes instead of fresh.

    Optional additions we've discovered:
    creamed corn, especially fresh
    cabbage, finely chopped
    onions, chopped

    This soup warms well in the microwave, but it's best not to bring to a full boil. Freezing is not recommended.
