Split Pea Soup

Another Mom used to make.
A nice thick soup, a little on the sweet side--from the sweetness of the peas. Recipes call for running the cooked soup through a sieve or blender, but mine cooks so long, everything just seems to fall apart and blend together.
Some recipes also call for soaking the peas overnight. I don't bother. They cook down without soaking.
Rinse 2-3 cups dry split peas. Cover with 2" water. Bring to a boil.
Add:
1 meaty hambone
minced garlic to taste (I use 2 cloves)
1-2 onions, chopped
1-2 stalks celery, chopped
3 carrots, chopped
1 dried red pepper
2-3 potatoes, diced
Cook until very soft. Remove meat from hambone. Return meat to pot. Put all through blender, if desired. Adjust seasonings.

Notes:
Yellow splits or lentils may be used instead of the traditional green split peas.
I've discovered Goya ham flavoring and have made this soup without the ham bone. Instead, I used two packages of Goya.
A hand-held blender works well to puree the soup shortly before serving, if desired.
