    Yankee Bean Soup

    List of Ingredients

    Also called Senate Bean Soup because it's served in the U. S. Senate dining room. Wonderful on a cold winter evening. Dick likes cornbread with it.


    Soak 1 lb. navy beans, washed well, in water to cover overnight (or quick-soften by boiling 2 minutes and then letting stand 2 hours).

    1 meaty hambone
    2-3 onions, chopped
    navy beans
    1-2 carrots, chopped fairly fine
    1 clove garlic, minced
    Salt and pepper to taste
    4-6 potatoes, cubed

    Recipe

    Cover hambone with water. Bring to boil. Simmer 1 hour.

    Add chopped onions, beans, and chopped carrots. Bring to boil. Immediately reduce to low heat. Cook until beans are soft about 1 1/4 hours.

    Remove hambone. Cool. Strip off meat and return to pot.

    Add salt and pepper to taste. (I like a lot of pepper and I often add a clove of garlic.)

    Add potatoes. Cook 20 minutes until potatoes are soft.



    Notes: This is best reheated in the microwave to prevent potatoes becoming tough.

    Beans should not be overcooked to the point they fall apart, but then, it really doesn't matter. The flavor remains fairly constant even when the texture changes.
