Mock Banana Orange Cheese Cake
List of Ingredients
1 non dairy graham cracker crust for a 10 inch
springform pan
18 oz. firm tofu
3 medium sized bananas
3/8 cup maple syrup
3/8 cup water
3/8 cup frozen orange juice concentrate, thawed
4 tsp. lemon juice
1 tbsp. vanilla extract
1/2 cup tahini (sesame seed paste)
fresh fruit or canned mandarine orange segments for garnishRecipe
Preheat oven to 350 F. Press crust into springform pan.
Combine all ingredients except tahini in a large bowl and blend using a wooden spoon or whisk. Place batches of mixture in a food processor and blend until smooth. Place mixture back in bowl. Stir in tahini. Gently pour into prepared crust. Bake until firm - about 45 minutes. Chill well.
Serves 10-12.
