    Herbed Chicken

    List of Ingredients




    1 cup extra-virgin olive oil
    4 cloves garlic, smashed
    2 frying chickens, cut into pieces
    1 teaspoon medium-grind black pepper
    1 teaspoon salt
    4 cups dry bread crumbs, finely crushed
    4 tablespoons chopped fresh rosemary
    4 tablespoons chopped fresh oregano
    1/2 cup grated Parmesan cheese
    4 tablespoons chopped Italian
    parsley

    Recipe



    Preheat oven to 325 degrees F.
    In a bowl, mix olive oil and garlic. In a separate bowl, mix bread crumbs, rosemary, parsley, oregano and Parmesan cheese.
    Dip each piece of chicken lightly in the oil, then salt and pepper to taste. Dredge oiled chicken in the bread-crumb mix, then place in a baking dish.
    Bake for approximately 20 minutes, then turn and bake another 20 minutes. Store chicken in refrigerator if cooked the night before.
    Allow to come to room temperature before serving. (If this tailgate party is happening in your home recreation room, serve the chicken hot from the oven.)
