Sopa de cebola
I recieved this recipe from a friend in Portugal. It's easy to make and tasted delicious. In some areas of Portugal the bread will be toasted in the oven before placing in the plate. I myself serve the soup with baguettes and without the bread in the plate.
List of Ingredients
- 1 1/8 pounds onions, cut in rings
- 3 tomatoes, cut into slices
- 3/8 cup olive oil
- 2 cloves garlic
- salt
- pepper
- 1 2/3 cups beef broth (instant)
- 4 eggs
- 1 tablespoon coriander, fresh
- 8 pieces bread
Instructions
- Heat oil, add onions and garlic and roast until light brown. Add tomatoes and the beef broth. Flavor with salt and pepper and cook for 20 minutes. When it is finished, add coriander.
- In the meantime poach the eggs.
- Place two slices of bread in every plate, fill with the soup and place the egg in the middle of the plate.
