    Anytime Shrimp Toss

    Recipe Introduction


    The best thing about this salad is it is easy, fresh, and low fat.


    List of Ingredients


    • 1 lb of salad greens, any variation
    • 1 bunch of radishes
    • 1 or 2 bunches green onion
    • 1/2 lb of vine ripe tomatoes or 1 basket of cherry or grape tomatoes
    • 1 large cucumber
    • 1/2 lb. cleaned cooked bay shrimp
    • 1 fresh lemon, lemon pepper, oregano, parsley, and garlic to taste
    • 3 to 4 Tbsp. olive oil
    • A few shakes of red wine vinegar to taste


    Instructions


    1. Slice and dice all of the veggies and set aside.
    2. Rinse the shrimp in cold water, drain and pat dry.

    3. In a large salad or pasta bowl, add salad greens and 1/2 of oil.
    4. Toss well and add shrimp. Add juice from 1 lemon.
    5. Add spices and toss well again. Add diced veggies, except for tomatoes.
    6. Toss again with the rest of oil. Add the vinegar and tomatoes and again toss.

    7. Serve immediately.
