Recipe Introduction
There are so many variations of damper, so just use your imagination. Once you have made it, you can get a flood of ideas on what to do with this highly versatile recipe. Try adding more sugar and butter and some dried fruits for a dessert damper or substitute some of the liquid for another, such as beer.
List of Ingredients
4 cups S/Raising Flour
1 tsp Salt
2 tsp Sugar
2 tblsn Butter
1 cup Milk
1/2 cup Water
Golden Syrup for serving - if desiredRecipe
Sift the flour and salt into a bowl then mix in the sugar.
Using your hands, rub in the butter until it looks like fine breadcrumbs.
Make a well in the flour, pour in the milk and water, and mix well until the dough comes clean from the sides of the bowl.
Turn out onto a floured board and knead until smooth.
There are many ways you can cook damper so we have listed a few here.
Shape into a mounded loaf and bake at 200c for 25 minutes. Then lower the temperature to 180 c and cook for a further 10 - 15 minutes until light golden brown in colour and sounds hollow when tapped.
If you are cooking it on a camp fire, wrap some of the dough around a stick (making sure it's not a poisonous one, the ones off Gum trees make them extra delicious) & cook over the fire. Or you could even wrap the dough in aluminium foil & place in the coals.
Delicious with Golden Syrup poured over it!
