A delicious change from plain vegies! Also this recipe is suitable for freezing as individual servings.
List of Ingredients
2 Tablespoons Creamed Corn
1 small Zucchini, grated
1 small Tomato, finely chopped
20g Butter
1/3 cup Macaroni (can also use a soft rice)
Recipe
Melt butter in a pan & add the tomatoes & zucchini, stirring until tender.
Meanwhile, cook macaroni until tender, then drain.
Mix with the vegetables & creamed corn.
Makes approx 2 cups.
