Recipe Introduction
These scrummy biccies are pretty much the Aussie’s National Biscuit. Originating during the first world war, some say that the Troops in the trenches got creative with their rations, others say it was the recourceful women on the home front baking treats for the soldiers & even a few suggest that they are a derivative of Scottish Oatmeal Cakes. Where ever they came from, they are delicious & ever so easy to make.
List of Ingredients
1 cup Plain Flour
1 cup Rolled Oats (regular oatmeal) uncooked
1 cup Desiccated Coconut
1 cup Brown Sugar
1/2 cup Butter
2 tbsp Golden Syrup (honey can be used as a substitute)
1 tsp Bicarbonate of Soda
2 tbsp Boiling Water
Recipe
Combine the sifted flour, oats, coconut and sugar in a bowl.
Melt the butter and Golden Syrup in a saucepan over a low heat.
Mix the bicarbonate of soda with the water and add to the butter and Golden Syrup.
Pour the liquids into the dry ingredients and mix well.
Spoon blobs of mixture, about the size of a walnut shell, onto a greased tin leaving allowing for the biscuits to spread.
Bake at 180C for 15-20 minutes.
Cool on a wire rack and seal in airtight containers.
For some variety add 2 teaspoons of ground ginger or wattle seeds.
