    125g Butter
    1 cup (220g)Caster Sugar
    2 Eggs
    2 cups (300g) S/R Flour
    1 cup (90g) Coconut
    1/4 cup (55g) Caster Sugar, extra

    Recipe



    Beat butter & sugar with an electric mixer in a medium bowl until smooth, add eggs, beat until combined. Stir in sifted flour & coconut in 2 batches.

    Roll level tablespoons of mixture into balls, press 1 side of balls firmly into extra sugar to flatten, place about 4cm apart on greased trays.

    Bake in moderately hot (180c) oven for around 12 minutes or until lightly browned. Loosen biscuits while warm. Cool on trays.

    Makes about: 40
