    Fudgy Chocolate Brownies

    90g Dark Chocolate (atleast 70% cocoa solids)
    100g Margarine
    1/2 cup Caster Sugar
    1/2 cup Brown Sugar
    1 tsp Vanilla Essence
    2 eggs plus 1 egg yolk, beaten
    100g Plain Flour
    3 Tbspn Cocoa Powder

    Preheat oven to 180C. Grease a shallow 18cm square tin and line the base with baking paper.

    Break up the chocolate and place it in a large heatproof bowl with the margarine. Set the bowl over a saucepan of simmering water, making sure the water is not touching the bottom of the bowl. Leave to melt, then remove from the heat and stir in the mixture until smooth. Set aside until cool.

    Stir in the caster sugar, dark brown sugar and vanilla. Gradually beat in the eggs. Sift over the flour and cocoa powder until evenly blended. Careful not to over mix.

    Pour the mixture into the tin. Bake for approx 30 mins or until risen but still slightly soft in the middle - a skewer should come out with a few moist crumbs.

    Leave in the tin for 5 minutes, then turn out onto a wire rack and leave to cool. When cold, peel off the lining paper and cut into 16 squares.

    The unused brownies can be stored wrapped in foil for up to 4 days.

    Makes approx 16 squares.
