    150g Butter, chopped
    80g Castor Sugar
    200g Plain Flour
    40g Ground Pecans
    1/2tsp Vanilla Extract
    1 Egg
    18 Whole Pecans

    Recipe



    Preheat oven to 160C. Place butter, sugar, flour, ground pecans, vanilla and egg into a processor and process on low speed until a smooth dough forms.

    Place dough on a lightly floured surface and knead gently.

    Wrap dough in plastic and refrigerate for 30 mins.

    Divide the dough into balls and place on a lightly greased pan.

    Flatten each ball slightly and gently press a whole pecan into the centre.

    Bake for 25 mins or until golden.

    Stand shortbread on pan for 5 mins before transfering to a rack to cool.

    Makes: 18
