    1 cup Almond meal
    2 cups Icing Sugar
    1 tbs plain flour
    4 Egg whites
    2 tbs Castor Sugar

    Filling
    250g White Chocolate, Melted
    2-3 drops pink food colouring

    Recipe



    Preheat the oven to 160c. Sift the almond meal, icing sugar & flour. Set aside.
    Beat the eggwhites with a hand-held electric mixer. Add the castor sugar & beat until soft peaks form. Gently stir the almond mixture into the egg whites until smooth. Drop tbs of the mixture onto baking trays lined with baking paper & bake for 12 - 14 minutes or until crisp on the outside & moist on the inside. Cool in the oven on the trays.
    To make the filling, combine the melted chocolate & food colouring, then cool slightly. To assemble, spread the base of a macaroon with the filling & sandwich together with another macaroon.
    Makes 10.
