    Coffee and chocolate...could it get any better??!

    List of Ingredients




    For the Cake:
    125g Butter
    1tsp Vanilla Essence
    2 Eggs, lightly beaten
    1 cup Castor Sugar
    2 Tbp Instant Coffee
    1 cup Milk
    1 3/4 cups S/R Flour
    1/4 cup Cocoa Powder

    For the Filling:
    1/4 cup Icing Sugar
    1/3 cup Thickened Cream
    1/2 cup Vanilla Custard
    250g Mascarpone Cheese
    1 punnet of Strawberries
    extra icing sugar to sprinkle

    Recipe



    Preheat oven to 180c. Grease and line a deep 20cm round cake tin.

    The Filling:
    Place the custard, cheese, cream and icing sugar in a bowl and beat until thick. Cover and place in the fridge until needed.

    The Cake:
    Cream the butter and sugar, then gradually add the eggs followed by the vanilla.

    Place the coffee in a small bowl and add the milk and mix until dissolved. Sift the flour and cocoa and add to the butter and sugar mixture alternately with the coffee mixture. Place into prepared tin and bake for 45 minutes or until a skewer comes out clean. Leave to cool.

    The Construction:
    Using a serrated knife, cut the cake horizontally into 2 layers. To assemble, place one layer on a serving plate, spread with half of the filling. Place second layer on top and finish with the filling and remaining strawberries. Sprinkle with icing sugar if desired.

    Serves 8
