Tiramisu Tarts

2 sheets of shortcrust pastry
1 cup mascarpone
2 tbs single or pouring cream
1 tbs espresso coffee
1 tbs brown sugar
100g melted dark chocolate
cocoa for dusting
Recipe
Preheat oven to 200c. Cut out 10 x 8 1/2cm rounds from the pastry. Gently push into 1/3 cup capacity greased muffin tins. Bake for 10 minutes or until golden. Set aside & cool. Place the mascarpone, cream, coffee & sugar in a bowl & stir until just combined. Set aside. Spoon teaspoonfuls of chocolate into the base of the pastry cases. Top with the mascarpone mixture & dust with cocoa.
Makes 10.
(Instead of the tiramisu filling, mix ricotta with vanilla & sugar & top with raspberries & strawberries.)
Sandwich chocolate biscuits together with vanilla or chocolate ice cream & serve with chocolate sauce.
