Mexically Potato & Eggs
This makes a great brunch for those who like to start ththe day with a little "Kick"
Easy, maybe doubled for larger groups.
List of Ingredients
- 6 Extra large eggs
- 1/4 Cup of 1/2 & 1/2
- 1 Small chopped onion
- 1/2 Cup Sweet Red Pepper
- 1/2 Cup Green Pepper
- Dash of Cayenne Pepper ( More to taste)
- 1/2 Cup Aunt Joyce's Seet and Spicy Salsa
- 3 Cups of shredded potatos ( Frozen is ok )
- Sea Salt
Instructions
- Saute onions until barely clear
- Pan fry potatos until golden brown or lees
- Add peppers cook until tender
I leave a little "crunch"
- Mix the eggs, 1/2 & 1/2 and seasoning
Beat until "fluffy"
- Add egg mixture to potato and peppers
Cook until done
- Spoon onto a serving plate or warming platter
- Top with Aunt Joyce's Sweet and Spicy Salsa
I offer it in a side bowl with a small laddel
- Salt to taste after cooking
- Garnish with fresk sprigs of parsley
Final Comments
I also use this as a quick mid-week supper
