    Mexically Potato & Eggs

    This makes a great brunch for those who like to start ththe day with a little "Kick"
    Easy, maybe doubled for larger groups.


    List of Ingredients


    • 6 Extra large eggs
    • 1/4 Cup of 1/2 & 1/2
    • 1 Small chopped onion
    • 1/2 Cup Sweet Red Pepper
    • 1/2 Cup Green Pepper
    • Dash of Cayenne Pepper ( More to taste)
    • 1/2 Cup Aunt Joyce's Seet and Spicy Salsa
    • 3 Cups of shredded potatos ( Frozen is ok )
    • Sea Salt


    Instructions


    1. Saute onions until barely clear
    2. Pan fry potatos until golden brown or lees
    3. Add peppers cook until tender
      I leave a little "crunch"
    4. Mix the eggs, 1/2 & 1/2 and seasoning
      Beat until "fluffy"
    5. Add egg mixture to potato and peppers
      Cook until done
    6. Spoon onto a serving plate or warming platter
    7. Top with Aunt Joyce's Sweet and Spicy Salsa
      I offer it in a side bowl with a small laddel
    8. Salt to taste after cooking
    9. Garnish with fresk sprigs of parsley


    Final Comments


    I also use this as a quick mid-week supper
