    Bean in Taos


    Recipe Introduction


    My friend before she moved to Taos make this for us as a dip, but it was so good I make it into a salad to serve with mexican style dishes.


    List of Ingredients


    • 5 ripe Hass avacados
    • 4 Tbsp freshly squeezed lemon juice
    • 6-8 dashes Tobasco sauce
    • 1/2 cup diced red or white onion
    • 1 large clove garlic, minced
    • 1 tsp sea salt
    • 1 tsp cracked pepper
    • 1 medium tomato, seeded, cut into small dice
    • 1 cup fine shred iceburg lettuce
    • 4 lettuce leaves to place salad into


    Instructions


    1. Remove the seeds from avacados. Being careful cut X's into each half of the avacados. Scoop out the flesh.
    2. In a large bowl combine avacados, lemon juice, salt, pepper, Tabasco, onion and garlic; toss carefully to coat. Add diced tomatoes and mix well.
    3. Fine slice about 1/2 cup of lettuce. Reserve leaves to place salad on plates.
    4. Place lettuce cups on plate, fill with shredded lettuce and top with guacomole mix. Sour cream is good on top also.


    Final Comments


    I love as a salad, is great as a dip also.
