    I could never find a potato soup I liked that was home-made. I started to play around with a bit of this and a lil' of that and BAM! Here it is! It's not healthy, by any means but it sure is a treat!


    List of Ingredients


    • 4 to 6 large potatoes
    • 1 large can chicken broth
    • 1 box potato flakes
    • 1 stick of butter
    • 1 small container of Half & Half
    • season salt & pepper to season
    • chives
    • bacon bits
    • shredded cheddar and mozzarella cheese


    Instructions


    1. Cut potatoes into cubes. Do NOT peel. Put in large pot with chicken broth. Bring to a boil.
    2. When potatoes are tender gently mash into broth leaving small chunks. Reduce heat to simmer.
    3. Add potato flakes to thicken.(NOTE:use as much or as little as you want. Whatever thickness you desire.)
    4. Add butter and some of the mozzarella cheese (as little or as much as you want.)
    5. Add Half & Half to make creamy. DO NOT let boil.
    6. Add season salt & pepper to taste.
    7. Before serving, add chopped chives, bacon bits and cheddar cheese to individual servings.
