    My father-in-law LOVES this recipe. You can cut back on the spices to make it as little or as hot as you'd like.


    List of Ingredients


    • 2 cups white rice
    • 1 tablespoon butter
    • 3/4lb andouille sausage; diced
    • 2 ribs celery; chopped
    • 1 tablespoon olive oil
    • 1lb boneless skinless chicken breast
    • 1 medium onion; chopped
    • 1 green bell pepper; chopped
    • 3 tablespoons flour
    • 1 can diced tomatoes
    • 1lb medium shrimp
    • 1 bay leaf
    • 2 tablespoons hot sauce
    • 1 teaspoon chili powder
    • 1 teaspoon worcestershire sauce
    • 1 teaspoon cumin
    • 1 teaspoon poultry seasoning
    • 1 can (14oz) chicken broth
    • Course salt and pepper


    Instructions


    1. Cook rice to pkg directions.
    2. Place large skillet over medium heat. Add oil and butter.
    3. Cube chicken and place in hot oil. Brown for 3 minutes, add sausage and cook about 2 minutes more.
    4. Add onion, celery, pepper, bay leaf and hot sauce.
    5. Saute' vegetables 5 minutes, sprinkle with flour and cook 1 to 2 minutes.
    6. Stir in tomatoes and broth. Season with cumin, chili powder, poultry seasoning and worcestershire sauce.
    7. Bring to boil and add shrimp. Simmer for 5 minutes.
    8. Ladle over rice.


    Final Comments


    Always good with crusty bread.
