Rhubarb Crisp

Recipe Introduction
We take this dessert and a copy of the recipe with us when we are asked to bring a dish to pass.
People who don't like rhubarb change their mind after they taste this dessert and often take seconds.
List of Ingredients
- 2 1/2 c. oat meal
- 2 1/2 c. brown sugar
- 3 c. flour
- 1 1/2 c. melted butter
- Mix together and pat half of the mixture into greased 9x13 pan. Save the rest for topping.
- 6 c. chopped rhubarb
- 1 T. ground cinnamon
- Place rhubarb over top of the mixture and sprinkle with cinnamon.
- 2 c. sugar
- 1/2 c. cornstarch
- Mix sugar and corn starch together in med. saucepan.
- 2 c. cool water
- 2 tsp. vanilla
- enough red food color for pretty color
Instructions
- Pour cool water, vanilla and food color into sugar mixture and mix well.
- Cook over med.
heat until thick. Stirring often.
- Let cool slightly. Pour over rhubarb and sprinkle with remaining
topping mixture.
- Bake in preheated oven for 30-35 min. at 350*. It's great served warm, with
ice cream is always better. ; )
