    List of Ingredients


    • 1 lbs ground beef, browned
    • 1 can whole corn, drained
    • 1 large can tomato sauce
    • 1 cup of your favorite salsa
    • 1 tbs. chili powder
    • 1.5 tsp. cumin
    • 2 slightly beaten eggs
    • 16 oz. cottage cheese small curd
    • 1/4 cup parmesean cheese
    • 1 tsp. oregeno
    • 1/2 tsp. garlic
    • 12 corn tortillas
    • 1 cup shredded cheese


    Instructions


    1. Preheat oven to 350 degrees.

    2. Combine the first 6 ingredients, in the skillet you browned the meat in.

    3. Combine cottage cheese, eggs, parmesan cheese, oregano, and garlic.

    4. Lightly grease a 9x13 pan, arrange 6 tortillas on the bottom of pan.

    5. Top with half of the meat mixture, spoon all the cheese and egg mixture on top of that.

    6. Arrange the rest of the tortillas, and top with the remaining meat mixture.

    7. Bake 30 minutes covered

    8. Remove cover and top with shredded cheese.

    9. Let stand for 10 minutes before serving.
