LOG CABIN POTATOES
List of Ingredients
8 med unpeeled potatoes, thinly sliced
3 large green tomatoes, thinly sliced
1 med onion, diced
1 c unbleached all purpose flour
1 lb low fat cheddar cheese, grated
1/4 lb lean bacon, cooked and crumbled
salt & pepper to taste
1/2 c. low fat milk
Recipe
Preheat oven to 350F. Oil a large baking dish. Alternate layers of the
potatoes. Sprinkle on a little of the onion, flour, cheese, bacon salt, &
pepper BETWEEN layers. COntinue layering until the dish is full, ending
with a layer of cheese. Pour the milk over the top and bake for 1 hour, or
until the potatoes are cooked and bubbly brown on top. Serve.
In a medium saucepan, simmer the carrots in water for 5 minutes,
uncovered. Add the tomatoes and cook for 5 min. Add the remaining ingredients and
cook for 3 min more. Serve hot
