    Linda's Pot Roast

    List of Ingredients

    1 4-5 lb. bottom round roast
    3 T. margarine
    2 lg. onions, whole
    8 med. carrots, sliced
    8 lg. potatoes, cubed
    2 garlic cloves, crushed
    1/4 c. corn starch
    water
    salt and pepper, to taste

    Recipe

    Trim excess fat from beef roast. On waxed paper, coat roast with flour.

    In 5 qt. cast iron pot, over high heat, melt 3 T. margarine, and cook roast until well browned on all sides.

    Add enough water to cover roast. Add onions, garlic, 1 tsp. salt, and 1/4 tsp. pepper. Heat to boiling. Reduce heat to low and cover and simmer 2 1/2-3 hrs. until roast is fork-tender, turning roast occasionally. Add water as you go if it gets down too low.

    About 1/2 hr. before roast is done, add carrots and potatoes.

    In a cup, mix cornstarch with 1 c. cool water. Stir it into the liquid with the pot roast. Add additional water if necessary.

    Makes 12 servings
