    List of Ingredients




    3 T. flour
    2 T. oil
    1/2 lb. smoked sausge, cut into 1/2" slices
    2 c. okra, frozen or fresh
    1 lg. onion, diced
    1 lg. green pepper, diced, and 1 red diced
    3 garlic cloves, minced
    1/4 tsp. ground red pepper
    1/4 tsp. black pepper
    1 14.5 oz. can diced stewed tomatoes, undrained
    3 c. uncooked, shelled deveined cooked med. shrimp, rinsed
    1 1/2 c. uncooked regular long grain white rice
    3 c. chicken broth or water

    Recipe



    In small saucepan, combine flour and oil. Mix well. Cook, stirring constantly, over med-high heat for 5 mins. Reduce heat to med. and cook, stirring constantly, about 10 mins. or until mixture turns reddish brown.

    Place flour-oil mixture in 4 qt. crock pot. Stir in all remaining ingredients except shrimp, rice and water.

    Cover, and cook on low setting for 7-9 hrs.

    When ready to serve, cook rice in chicken broth, or water.

    Meanwhile, add shrimp to gumbo mixture in crockpot, and mix well.

    Cover, and cook on low for an additional 20 mins., or until shrimp is pink, and cooked through. Serve gumbo over rice.
