    Recipe Introduction

Recently I went to a party to welcome the newcomers into our neighborhood...This is one of the desserts I made, and it was really good.

    List of Ingredients

    Crust

    3 c. flour
    3/4 c. unsalted butter
    1/2 c. sugar
    2 egg yolks
    zest from 1 lemon, grated

    Cream

    2 yolks
    2 T. flour
    1 c. milk
    1/2 tsp. vanilla extract
    4 T. sugar

    Topping

    4 lg. apples
apricot jam, I'd like to try peach jam next time, I used a whole jar, and it was too much, so use how much you like
    juice of half a lemon

    Recipe

    For The Crust:

Combine the ingredients, using a pastry cutter to keep from handling them, and roll the resulting dough out into not-too-thin sheet, and use it to line a 10" or so pan, crimping the dough around the rim to form a tip. I used a round spring form pan.

    For The Cream:

Prepare the pastry cream by combining the ingredients, and heating them while stirring gently over a low flame, until the mixture thickens. Do not boil!

    For The Topping:

Once you have prepared the dough and the cream, peel, and core the apples, and slice them thinly. Sprinkle with lemon juice, to keep them from discoloring.

    Preheat oven to 400.

Pour out a layer of cream over the dough, and arrange the sliced apples over it.

Dot the apples with bits of unsalted butter, and dabs of apricot jam.

Dust the crostata with sugar, and bake for at least 20 mins.

    Note:
The crust is kind of dry and crumbly, so make sure you have a pastry cutter for this recipe, so the crust comes out right.

You can also use other jams for this recipe, depending on what you like.
