Buddy's Crawfish Strudel
2 1/2 lbs. crawfish tails
4 shallots, chopped
1 lg. onion, chopped
1/2 c. butter
2 cloves garlic, minced
1/2 c. white wine
1/2 c. whipping cream
salt and pepper
8 dozen phyllo shells
1 small Brie cheese
8 oz. finely shredded Monterey Jack cheese
Recipe
Cook crawfish, shallots, and onion in butter, garlic, and white wine for about 3 mins.
Add whipping cream, and cook until liquid reduces, about 30 mins. Add salt and pepper.
Place shells on a cookie sheet.
Place a small piece of Brie in the bottom of each shell.
Fill each shell with crawfish mixture, and top with Monterey Jack cheese.
Bake at 375 for 8-10 mins.
This recipe halves easily.
