    4 c. chicken, cooked and chopped
    1 lb. smoked saugage, cut into 1/4" slices
    1 can Ro-tel tomatoes
    2 lg. onions, chopped
    2 bell peppers, chopped, 1 green and 1 red
    4 cloves garlic, minced
    2 stalks celery, chopped fine
    3 c. raw rice
    1 tsp. each, salt and red pepper flakes
    1/2 c. black olives
    2 c. med. size cooked shrimp
    1/4 c. yellow banana pepper rings, chopped

    Recipe



    Lightly brown the sausage in a lg. pot.

    Add 1/4 c. olive oil. Saute onions, garlic, celery, and peppers for 3 mins.

    Mix all remaining ingredients except black olives, and banana peppers.

    Add 6 c. of chicken broth to the mixture and stir it well.

    Bring to boil. Reduce heat, and cover and simmer for 20 mins., or until rice is tender. Stir once or twice while cooking, very quickly.

    Keep covered.

    When finished, add black olives and banana peppers, and shrimp.
