    Linda's Marinated Potato Salad

    List of Ingredients




    10 lb. potatoes
    1 c. water
    1 c. white wine vinegar
    1 c. white sugar
    2 onions, diced
    salt and pepper to taste
    1 T. celery seed
    2 c. mayonnaise
    3 stalks celery, diced
    3 carrots, grated
    1 green pepper, chopped

    Recipe



    Bring a lg. pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 mins. Drain and allow to cool.

    Slice cooled potatoes, and layer in a lg. bowl or dish.

    In a saucepan, combine water, vinegar, and sugar. Bring to a boil, and cook for 1 min.

    Remove from heat, and pour over potatoes.

    Cover, and chill for at least 12 hrs.

    Drain excess marinade and add onions, celery, and green pepper, salt, pepper, celery seed and mayonnaise.

    Mix well and serve chilled.

    Makes 10-12 servings
