    To make this a main-dish salad, add tuna and hard-cooked eggs.


    List of Ingredients




    12 oz. fresh whole green beans, trimmed, or 1 9 oz. pkg. frozen whole
    green beans
    12 oz. tiny new potatoes, halved
    1 med. onion, chopped
    2 T. olive oil or salad oil
    1 T. sugar
    2 tsp. cornstarch
    1/2 tsp. salt
    1/2 tsp. celery seed
    1/4 tsp. pepper
    1/3 c. water
    1/4 c. fresh lime juice
    8 c. torn mixed greens
    1/2 c. halved cherry tomatoes
    2 T. sliced pitted ripe olives

    Recipe



    Cook fresh green beans with potatoes in boiling water in lg. covered saucepan 15-20 mins. or until just tender. (If using frozen beans, add during last 5 mins.) Drain and return to saucepan.

    Meanwhile, cook onion in hot oil in med-sized saucepan, until tender.

    Stir in sugar, cornstarch, salt, celery seed and pepper.

    Add water, and lime juice.

    Cook and stir, until slightly thickened, and bubbly. Cook and stir 2 mins. longer.

    Pour over potato mixture, tossing gently to coat.

    Divide greens among 6 salad plates.

    Top with potato mixture, tomatoes and olives.

    Makes 6 servings
