Sue's Orange Chipolte Sauce

This is wonderful with all meat and fish.
List of Ingredients
2 T. olive oil
1 c. chopped onion
1 c. chopped tomato
2 T.s minced garlic
2 T. chopped drained canned chipotle chile in abodo sauce
2 c. fresh orange juice
1 c. white vinegar
1/2 c. catsup
1/4 c. packed brown sugar
1/4 c. molasses
1/4 tsp. Kosher salt
1/4 tsp black pepper
1/4 c. fresh lime juice
1/2 c. chopped fresh cilantro
Recipe
Heat oil in lg. non-stick skillet over med-high heat.
Add onion, and saute for 10 mins., or until browned, stirring frequently.
Add tomato, garlic and chile. Cook 3 mins.
Add orange juice and vinegar. Bring to a boil.
Reduce heat, and simmer until reduced to 1 1/3 c., about 30 mins.
Stir in catsup, sugar, molasses, salt and pepper. Cook 5 mins.
Place mixture in a food processor, process until chunky, smooth.
Stir in lime juice and cilantro.
Makes 2 c.
