    5 T. butter
    1 lb 2 oz. onions, finley chopped, I use spanish in this recipe
    1 garlic clove, crushed
    6 T. flour
    2 1/2 c. vegetable, or chicken stock
    2 1/2 c. cream
    2 T. lime or lemon juice
    good pinch ground allspice
    1 bay leaf
    1 carrot, coarsely grated
    3 T. heavy cream
    2 T. chopped parsley
    salt and pepper, to taste

    Recipe



    Melt butter in saucepan, and fry onions, over low heat stirring frequently, about 12 mins.

    Add garlic, and stir another 3 mins.

    Stir in flour and cook, stirring for 1 min., then gradually stir in stock, and bring to boil, stirring frequently.

    Add the cream, then return to the boil.

    Season to taste with salt and pepper, and add 2 tsp. of the lemon or lime juice, the allspice, and bay leaf.

    Cover and simmer for about 25 mins., until vegetables are tender. Discard bay leaf.

    Stir the carrot into the soup, and simmer for 3 mins.

    Add more lemon juice or lime juice, if you think it needs it.

    Stir in the 6 T. of cream, adding chopped parsley.

    Heat, and serve.
