    Note: Small Mozzarella balls are called bocconcini in Italian, meaning "little bites" and are often sold under this name, at Italian deli's and stores.

    List of Ingredients




    1 pound small Mozzarella balls, drained
    Extra-Virgin olive oil
    2 tablespoons lemon juice
    1 3-inch sprig of fresh rosemary
    1 teaspoon minced fresh basil leaves
    1 teaspoon minced garlic
    1/2 teaspoon salt
    1/4 teaspoon crushed red pepper flakes

    Recipe



    Place the drained Mozzarella cheese balls into 1-quart mason jar with a tight-fitting lid. Add enough extra-virgin olive oil, to cover by 3/4-inch. Add the remaining ingredients.

    Cover tightly and shake well to mix the ingredients, being careful not to break up the cheese balls. Refrigerate for 12 hours. Bring to room temperature before serving.

    The marinated Mozzarella cheese balls will keep refrigerated for 1 week.
