    Phyllo Pizza Puffs

    4 cups sliced fresh mushrooms
    1/2 cup sliced pepperoni
    1/2 cup diced tomato
    1/2 cup grated Mozzarella cheese
    2 tablespoons chopped fresh basil
    1 tablespoon chopped fresh oregano
    Dash of hot dried red pepper
    4 sheets phyllo dough
    Olive oil

    Saute mushrooms for 5 minutes; drain. Mix with pepperoni, diced tomato, Mozzarella cheese, chopped basil, oregano and dried red pepper. Divide into 8 portions. Cut phyllo dough in half. Cover with damp towel. Place 1 piece on dry counter. Brush lightly with olive oil.

    Fold in half lengthwise. Brush with oil. Spoon 1 portion of mixture onto bottom. Fold over on an angle. Repeat, folding to a sealed triangle. Brush lightly with oil. Repeat 7 times. Place on parchment-lined baking tray.
    Bake at 375° F. for 15-20 minutes until lightly browned. Serve with creamy garlic dip.
