Oklahoma Joe's Barbecued Ribs
4 to 5 cups hickory or fruitwood chips
4 pounds pork loin back ribs
1/4 cup Mustard Rub (see recipe under Sauces)
Rib Rub (see under Sauces)
Apple juice
1 cup Joe's KC-Style Barbecue Sauce (see recipe under Sauces)
At least 1 hour before grilling, soak wood chips in enough water to cover. Trim membrane from back of ribs. Cut into 3-rib portions. Brush meaty sides of ribs with Mustard Rub. Sprinkle Rib Rub over meaty sides of ribs. Cover and refrigerate 30 minutes to 4 hours.
Drain chips. For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place half of chips over coals. Place ribs, bone side down, on rack over drip pan. Cover; grill 1 hour without removing lid.
After 1 hour, using a spray bottle, lightly spray ribs with apple juice. Add remaining presoaked chips and more charcoal, if needed. Grill ribs 30 to 45 minutes more, spraying with juice every 15 minutes. (For gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking.
Add chips according to manufacturer's directions. Grill as above, except place ribs in a roasting pan.
At the end of grill time, meat should pull away from bones. Baste with barbecue sauce. Grill 5 to 10 minutes more. To serve, place ribs on a serving platter. If you like, serve with remaining sauce.
