    Italian Snack Bread

    Bread:
    1 cup milk
    1 package active dry yeast
    1 cup canola oil
    1/8 teaspoon salt
    3 cups all-purpose flour
    Egg yolk
    Filling:
    1 pound shrimp, tuna or chopped ham
    6 medium tomatoes
    1 green bell pepper
    1 large onion
    3 teaspoons mustard

    Warm milk and dissolve the yeast. Add oil and salt. Mix thoroughly. Gradually add the flour to milk mixture to make dough. Mix again and form into a ball. Place in a greased bowl, in warm place and let rise 45 minutes.

    If fresh shrimp are used, cook shrimp. Cut up tomatoes, green pepper and onions in small pieces. Mix with mustard and canned or cooked shrimp (or tuna or ham). Grease three 9-inch bread pans well.

    Place bread dough on waxed paper. Pat dough into three large circles. Fill with chopped vegetables and meat/fish or shrimp. Roll up. Brush tops of loaves with beaten egg yolk. Bake in 350° oven for 45 minutes or until bread has risen and lightly browned.

    Makes 3 loaves
