    Sandi's Crackling Corn Bread

    List of Ingredients




    1 cup sifted all-purpose flour
    1/4 cup sugar
    4 teaspoons baking powder
    3/4 teaspoon salt
    1 cup yellow cornmeal
    2 eggs
    1 cup milk
    1/4 cup shortening
    1/4 cup cracklings (or more)

    Recipe



    Sift flour, sugar, baking powder and salt. Stir into the cornmeal. Add the eggs, milk and shortening; beat until smooth. Stir in cracklings. Pour into a greased 9x9x2-inch pan or use muffin tins. Bake at 425 F. for 20-25 minutes or 15-18 minutes for muffins.

    Serves 4-6
