    Italian Cheesecake

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    32 ounces cream cheese
    6 eggs -- room temperature
    1 1/2 cups granulated sugar
    2 tablespoons corn starch
    4 ounces margarine -- melted
    1 teaspoon vanilla
    1 teaspoon coconut extract
    1 teaspoon brandy extract
    1 teaspoon orange extract
    1 teaspoon rum extract
    1 teaspoon fresh lemon juice
    1 tablespoon anise extract
    1 pound ricotta cheese
    3 ounces diced citron

    Mix all ingredients in order given. When batter is well mixed, add citron
    and blend again.

    Put batter into a 10 inch spring form pan. Bake in a 450 F. degree oven
    for 10 minutes. Lower oven to 350 F. and bake for 1 hour. Place a pan of
    water in oven while cheesecake is baking. Let stand for 2 hours before
    removing from oven. Remove from oven and refrigerate for 4-5 hours
    before serving.
