    Orange Crush Cream Pie

    Amount Measure Ingredient -- Preparation Method

    2 egg yolks
    1 package orange jello -- (3 ounce)
    2 cups Orange Crush soda pop

    1/2 pint whipping cream
    2 egg whites -- at room temperature
    1/4 cup sugar
    Drained Mandarin orange slices -- for garnish
    Wafer-Pecan Pie Crust -- *see note

    Combine egg yolks and jello in pan. Gradually add "Orange Crush". Cook over moderate heat, stirring constantly, until mixture reaches boiling point and gelatin dissolves. Refrigerate until thickened. Whip cream until stiff. Beat egg whites until foamy. Gradually add sugar. Beat whites until stiff. Fold one-half cup of the whipped cream into gelatin mixture. Fold egg whites into gelatin mixture. Spoon mixture into Wafer-Pecan pie crust. Refrigerate several hours or overnight. Garnish with remaining 1/2 cup whipped cream, which has been sweetened to taste with powdered sugar, and Mandarin oranges.

    *Wafer-Pecan Pie Crust: Combine 1-1/4 cups finely crushed vanilla wafers (40 to 50 wafers), 1/4 cup finely chopped pecans and 1/2 stick melted butter. Mix until well blended. Press mixture onto bottom and sides of 9-inch pie pan. Bake in preheated 375° F. oven for 8 to 10 minutes or until golden brown. Refrigerate until cold before filling.
