    Streusel Rhubarb Cake

    Amount Measure Ingredient -- Preparation Method

    Cake:
    2 cups flour
    1/2 cup sugar
    2 tablespoons baking powder
    1 teaspoon salt
    1 cup milk
    4 cups fresh rhubarb -- sliced
    3 tablespoons strawberry gelatin
    Streusel Topping:
    3/4 cup sugar
    1/2 cup flour
    1/2 cup quick oats
    1/2 teaspoon cinnamon
    1/4 cup margarine

    Blend together all cake ingredients except rhubarb and gelatin; beat 2 minutes. Pour batter into a 13x9-inch pan, greased on bottom only. Top with sliced rhubarb and sprinkle with strawberry gelatin. Mix together dry ingredients for topping; cut in margarine until crumbly. Sprinkle on top. Bake at 375 F. for 35 to 40 minutes.
    Serve warm or cool.

    Serves 6
