Zucchini Toffee Cake

List of Ingredients
1 cup whole wheat flour
1 cup all purpose flour
1/4 cup wheat germ
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, slightly beaten
1 cup sugar
1/2 cup vegetable oil
1/3 cup half and half
1 cup shredded zucchini
1 cup ripe banana, mashed
1 cup Toffee Chips
1/2 cup powdered sugar
In a large mixing bowl stir together the whole wheat flour, all-purpose flour, wheat germ, cocoa powder, baking powder and salt.
In another mixing bowl, whisk together egg, sugar, vegetable oil and half and half.
Stir in the zucchini and the banana.
Add the egg mixture to the flour mixture and mix completely.
Stir in the Toffee Chips until completely mixed.
Spray a 9x13-inch baking dish with baking spray.
Pour the batter in the baking dish and bake at 350 degrees for 25 to 30 minutes.
Remove from the oven and let cool.
Dust the top with powdered sugar.
Makes 12 servings
