    Cinnamon Logs

    2 egg yolks
    1 3/4 cups sugar
    2 (8 ounces each) packages cream cheese, softened
    3 Loaves Pepperidge Farm sandwich bread (or other firm, thin sliced bread)
    1 pound margarine
    4 teaspoons ground cinnamon

    Beat egg yolks and 1/2 cup sugar together; stir in cream cheese until smooth. Trim crusts from bread; use a rolling pin to flatten each slice.

    Spread cheese mixture on a slice of bread; top with another slice to make a sandwich. Do the same with the remaining bread slices. Cut each sandwich lengthwise into 4 logs.

    Melt margarine. Mix cinnamon and remaining 1 1/4 cups sugar in a bowl. Dip each log in melted margarine and then in cinnamon sugar. Place on rimmed cookie sheets. Bake in a preheated 400 degree oven for 10 minutes.

    To freeze: Before baking, flash freeze on cookie sheets. Put in freezer bags. To serve, remove as many logs as needed. Place on cookie sheet and bake at 400 degrees for 10 minutes.

    Makes 80 - 100 logs.

    I haven't tried these yet but they sound like something my kids would like. Hope this is what you were looking for!
