    Oatmeal Whoopie Pies

    Amount Measure Ingredient -- Preparation Method

    2 cups firmly packed brown sugar
    3/4 cup butter (1-1/2 sticks) -- softened
    2 eggs
    2 cups flour
    1/2 teaspoon salt
    1 teaspoon baking powder
    1 teaspoon ground cinnamon
    2 cups quick-cooking oatmeal
    1 teaspoon baking soda
    3 tablespoons boiling water
    Filling:
    Reconstituted powdered egg white to equal -- see note*
    1 egg white
    1 tablespoon vanilla
    2 tablespoons milk
    2 cups confectioners sugar -- divided
    1/2 cup vegetable shortening (Crisco)
    2 tablespoons flour

    Cream together brown sugar, butter and eggs. Combine flour, salt and baking powder; add to creamed mixture. Add cinnamon and oats; mix well. Add soda to boiling water and add to batter. Mix thoroughly. Drop by tablespoonfuls onto greased cookie sheets. Bake at 325 F. for 10-15 minutes. Cool completely.
    Spread filling on half of the cookies, then top with the remaining cookies to make "sandwiches". Wrap each in plastic wrap.

    For Filling: Combine egg white, vanilla, milk and 1 cup confectioners sugar; cream well. Add remaining ingredients and beat until fluffy.

    Note: Dried egg whites, which are pasteurized, are sold in cake decorating supply stores and in some supermarkets.
