The Orchard's Chocolate Chip Cookies

6 cups all-purpose flour
1 tablespoon baking soda
1 tablespoon salt
3 cups margarine -- softened
2 1/2 cups brown sugar -- firmly packed
1 cup granulated sugar
5 eggs
2 teaspoons vanilla
2 1/2 cups semisweet chocolate chips
Combine flour, baking soda and salt; set aside. Cream together well, margarine, brown and granulated sugars. Beat in eggs, one at a time, and the vanilla. Mix in the dry ingredients, using hands to blend well. Gently stir in the chocolate chips. Drop by heaping tablespoonfuls onto parchment-lined baking sheets. Bake at 350 F. for about 8 minutes. DO NOT OVERCOOK!
Place baking sheet on a rack so air can completely circulate under the cookies as they cool, or slide parchment paper with cookies still in place, onto racks to cool. When completely cooled, store in tightly covered container.
Makes 9 to 9-1/2 dozen
