    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 cup shortening
    2 cups sugar
    2 eggs
    2 cups zucchini -- grated
    2/3 teaspoon salt
    2 teaspoons vanilla
    4 cups all-purpose flour
    2 teaspoons ground cinnamon
    2 teaspoons baking powder
    2 teaspoons baking soda
    1 cup chopped nuts

    Cream the shortening, sugar and eggs. Add the zucchini, salt and vanilla. Mix with the dry ingredients and blend well. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 F. for 8 to 10 minutes.

    NOTES : You can 1/2 cup raisins to this if desired also. Nice way to use up an over abundance of zucchini. These freeze well.
