Batter-Fried Sweet and Pungent Pork

1 pound boneless pork shoulder -- cut in 1-inch cubes
1 egg
1/2 teaspoon salt
1/2 cup flour
1/4 cup water
Vegetable oil
1/2 cup cider vinegar
1/4 cup brown sugar
1 tablespoon molasses
3/4 cup water
2 tablespoons cornstarch
1/4 cup cold water
8 ounces pineapple chunks -- drained
1 tomato -- cut in 6 wedges
Beat the egg and salt; mix in flour and 1/4 cup water until a smooth batter is formed.
Dip the pork cubes in the mixture, coating the pieces on all sides. Heat the oil to 365 F. and fry pork cubes on all sides until browned. Don't crowd the pan; drain well and keep hot.
In a saucepan, mix cider vinegar, brown sugar, molasses and 3/4 cup water. Bring to a boil. Mix the cornstarch with the 1/4 cup of cold water; stir into the sauce until thickened. Add pineapple and tomato wedges; cook over low heat 3 minutes. Mix in pork and serve.
