1 1/2 pounds sirloin steak
5 tablespoons oil
4 cups sliced onions
2 tablespoons cornstarch
1/2 teaspoon sugar
2 tablespoons soy sauce
2 tablespoons dry sherry
Have the steak pounded 1/4-inch thick, cut into narrow strips. Heat half the oil in a skillet and saute the onions 3 minutes. Add the sugar, 1 tablespoon soy sauce and 1 tablespoon sherry. Bring to boil. Remove onion from pan. Toss the steak with the cornstarch, remaining soy sauce and the sherry. Add the remaining oil to the pan and brown the steak quickly over high heat. Return onion mixture to pan and cook 2 minutes.
