2 whole raw chicken breasts -- cut in 1-inch
squares
1 clove garlic -- minced
2 tablespoons soy sauce
3 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons cornstarch
3 green and red peppers -- cut in 1-inch
squares
1/2 cup sliced green onion
3 stalks celery -- sliced 1/2-inch
pieces
1/4 teaspoon sugar
1/4 cup cold water
Combine the chicken, garlic, 1 tbsp. soy sauce, 1 tbsp. oil, salt, pepper and 1 tsp. cornstarch; let stand 20 minutes. Heat the remaining oil in a skillet or wok and saute the peppers 3 minutes. Add the green onion and celery and saute 2 minutes. Transfer to a dish. Add the chicken to the skillet and cook 5 minutes. Mix the remaining soy sauce and cornstarch with the sugar and water. Add to the skillet with the cooked vegetables. Stir over low heat 2 minutes or until thickened.
