    Fried Rice.....The Wong's

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/4 cup oil
    1 beaten egg
    1 cup meat -- *see note
    1/4 cup oil
    3 cups cooked -- chilled rice
    1 cup bean sprouts
    1 cup sliced mushrooms
    Salt and pepper to taste
    1 Pinch Ac'cent (MSG) -- optional
    2 tablespoons soy sauce
    1/4 cup chopped green onions

    Heat large skillet or wok until very hot. Add 1/4 cup oil and heat until it too becomes very hot. Add 1 beaten egg and stir. When its done, the egg will be in rather small pieces. Add 1 cup meat and cook until browned. Remove egg and cooked meat; reserve. Add another 1/4 cup oil an bring to high temperature. Add chilled rice and fry until grains are fairly dry and each grain separate. There should be no lumps.
    Rice should be constantly stirred while frying. Add bean sprouts, mushrooms, meat and egg mixture previously reserved and mix together while adding salt, white pepper to taste and a pinch of Ac'cent. Sprinkle soy sauce over rice and mix into fried rice by briskly stirring. Add green onions and cook while continuing to stir briskly, about 1 minute.

    Serves 6
