    Cheese-Stuffed Manicotti

    1 package manicotti shells
    1 egg -- beaten
    15 ounces ricotta cheese
    6 ounces shredded Mozzarella cheese
    6 ounces shredded Cheddar cheese
    1/2 cup grated Parmesan cheese
    1 tablespoon chopped parsley
    1 Dash nutmeg
    Salt and pepper to taste
    1 quart PREGO spaghetti sauce or your own homemade
    1/4 cup grated Parmesan cheese

    Cook manicotti shells as package directs, but just enough to make them flexible; don't overcook...or they will fall apart. Mix together egg, ricotta, Mozzarella, Cheddar and Parmesan cheeses, parsley, nutmeg, salt and pepper to taste. Fill manicotti shells, you can fill them with a pastry bag or slice them lengthwise, and fill. Lay them cut side down, if you cut them.
    Cover bottom of a 9x13-inch baking dish with a thin layer of spaghetti sauce. Arrange the filled manicotti in dish. Cover with remaining sauce and sprinkle with extra Mozzarella and grated Parmesan cheese. Cover dish with foil. Bake at 350° F. for 30 minutes. Uncover and continue baking another 15 minutes.

    Serves 6
